Chocolate Flourless Cake!

Recently I have discovered that I am a Celiac. When I first found out it sounded like my relationship with tasty food was about to end! But how wrong I was...

After hours and hours of googling what foods have Gluten in them and what foods are safe, I discovered a recipe for a flourless cake. At first glance it sounded strange, but after reading the reviews I thought I'd give it a bash!

I decided to decorate my cake with Cadbury Chocolate Buttons and Starwberries. But since then ive made another cake and when serving I put it in the microwave for a couple of seconds and added cream = warm and gooey chocolate cake!! Delish!! 

The recipe I used is below.

Flourless Chocolate Cake.
  • 120g Gluten Free Dark Chocolate.
  • 120g Unsalted Butter.
  • 3 Eggs.
  • 20g Cocoa Powder.
  • 140g Caster Sugar.
  • Teaspoon of Vanilla Extract (or vanilla coffee syrup if you've run out!)
  1. Preheat the oven at 160C.
  2. Line a cake tin with either baking paper or butter.
  3. Melt the chocolate and butter in a bowl over a simmering pan of water. 
  4. Remove from heat and fold in sugar, cocoa powder, eggs and vanilla.
  5. Bake in oven for 30 minutes and leave to stand for 10/15 minutes until cool.
  6. Turn out upside down onto a cooling rack and leave to cool for a further 10 minutes.
  7. Decorate and enjoy!!
