Mediterranean Roast Veg and Pesto Pasta.

Now this is one of my all time favorite recipes. Its so simple and tasty I'd make it everyday if I could!! It is perfect for everyone due to the versatility of the dish, adding in everyones favourite vegetables. 
I'll admit tonight I used up all of my veg that was leftover in the fridge which didnt leave me a lot but I still enjoyed it.

Ingredients.
  • Courgette.
  • Carrot.
  • Peppers (any colour)
  • Mushrooms.
  • Garlic Cloves.
  • Parsnips.
  • Olive Oil - I would recommend Fry Light Olive Oil
  • Herbs - I would usually use garlic and paprika.
  • Gluten Free Pasta.
  • Tomato Pesto.
Stick all of the veg in a roasting tin and spray the Olive Oil on with the Herbs and roast for about 20 minutes. 
Boil water in a pan and add the pasta. Once cooked drain the water and stir in the pesto. My particular favourite is the Sacla Italia Sun Dried Tomato Pesto. 
Put in a bowl and serve with the veg on top.
Easy and fabulous!
