Heart Warming Beef Casserole.

Beef Casserole.

I don't know about you but I love nothing more than to spend Sundays with my slippers on, in the warm with a bowl of tasty beef casserole. Before becoming a Coeliac I used to love putting on the slow cooker and smelling the aromas filling the house. 
I missed this so much so I thought I would try to make a gluten free version and I have to say the results went down tremendously! The recipe below is meant to serve four people but between me and my boyfriend we near enough polished off the whole pot!!


  • 450g of Beef Stewing Steak.
  • 500g New Potatoes (ish)
  • 3 Carrots 
  • 2 Parsnips
  • 1 Leek 
  • 3 Gluten free beef stock cubes
  • Cornflour
  • 3 Garlic Cloves
  • Herbs 
  • Half a bottle of Red Wine

Firstly, preheat the slow cooker to high.

Add a little Olive Oil into a frying pan and brown off the beef to lock in the flavour.
Once browned off add to the slow cooker.
Peel and chop up carrots, parsnips, leek and garlic and add them to the beef.
Pour the red wine into the frying pan and add in your herbs, seasoning and stock cubes. 
If your like me and like a thicker gravy then add in some cornflour to your own preference.
Bring to boil and then add to slow cooker. 
Put the lid on and leave to cook for 4-5 hours, stirring every now and again to prevent sticking. 

Pour into soup bowls and dig in!!
