Tomato Pesto Hummus!

Tomato Pesto Hummus...

The two things I love most are Pesto and Hummus so I had to attempt to see what it would be like to mix the two...and it is now my favourite thing I've made to date!

Hummus is such as easy snack to make and its healthy too! This recipe makes enough for a couple of servings so is perfect for busy people who do not have a lot of time on their hands. In my opinion Pesto is one of the few ingredients which works well when added to any savory dish! 

The recipe I used is below, have a go at making it and let me know what you think!!

Ingredients.

  • 1 can of Chickpeas.
  • 2 Tablespoons of Lemon Juice.
  • 8 Tablespoons of Olive Oil.
  • 2 Tablespoons of Tahini Paste - If your like me and have never heard of this I found it in my local Sainsbury's and it is near the Asian spices. Essential in Hummus to give it that kick of flavour.
  • 2 Teaspoons of Paprika.
  • 1 Tablespoon of Tomato Pesto - Or more if you prefer a stronger flavour!
  • 5 Tablespoons Water.
Simply cook the chickpeas for 5 minutes in a pan with a tiny bit of Olive Oil.
Add these to a food processor along with the Olive Oil, Tahini Paste and Paprika slowly adding in the water as needed.
Blend until you have a hummus like texture - basically smooth as you like but I prefer a few lumps and chunky pieces!
Once you are happy with the consistency stir in the pesto.
Add to a plate with Cucumber and/or Carrot Sticks and enjoy!!
