Vegetable and Lentil Soup.

So the weather here in England is horribly unpredictable and this week it got a bit chilly so I decided to make my homemade soup to warm me up!! 
I first made this soup after a trip to a local supermarket and when I read the labels on a lot of tins of soup, especially Heinz, I quickly realised that most of them contain gluten in the form on flour to thicken them. How annoying. So I made my own soup and I love it so much I make one every Sunday and it will last me for 5 lunches at work.
I dont know about you but personally I love a thick smooth soup to dip some bread into (GF obviously!) but some people prefer a chunky soup, so depending on preference you can either put it in a food processor and blend or leave it as it is. Its such a simple recipe so have a go at it and enjoy!!

These Kallo Vegetable stock cubes are the best ones I've found, try to use two if you want a bolder flavour,




Ingredients.
  • 2 Litres of Boiling Water
  • 2 Small Potatoes.
  • 120g Red Lentils.
  • 2 Carrots.
  • 1 Onion.
  • 2 Vegetable Stock Cubes. 
  1. Start by peeling the potatoes, onion and carrots and chop them up into small pieces. 
  2. Place them in a large saucepan with the water, stock cubes and lentils. 
  3. Add some seasoning, and bring to the boil.
  4. Turn the heat down to low and simmer with a lid on for 45 minutes stirring occassionally throughout.
  5. If you prefer a chunky soup then serve straight away. But if you prefer a smoother soup then put in a food processor and blend until smooth. (Tip: for a creamier taste add in a tablespoon of butter)
