Veggie Paella!

Last year when I visited Madrid, Paella was my favourite Spanish dish! I have tried a couple of recipes but this one has to be my fav! Its not quite what you would class as traditional Paella but I like to experiment with different flavours and this turned out to be the best batch yet! 

Now the traditional vegetables you would put in consist of onions, every colour pepper you can find and peas, but as this is not completely traditional, I just put whatever was in the fridge in! So your free to play to your own senses and taste buds with this! 


  • 250g rice (Long grain usually works best)
  • 800ml Vegetable stock (I used the Kallo Vegetable stock cubes)
  • Tablespoon of Paprika.

Any veggies you want! I went for:

  • Yellow and green pepper.
  • Courgette.
  • Sweetcorn.
  • Mushrooms.
  • Leeks.

  1. Put the stock in a pan with the rice (remember to rinse the wash out before using) 
  2. Bring to the boil.
  3. Once boiled for a couple of minutes, stir and cover. Leave for 10 minutes.
  4. Add in the veggies and paprika,
  5. Stir until the veggies have softened.
  6. Serve and enjoy!!
