Gluten and Dairy Free Scones

I've been super busy recently with work and exams so I havent been able to blog or bake recently, but today I have the day off and wanted to make something delicious to eat in this glorious sunshine, so I made some scones.

Before today I had never made scones which were without Gluten or Dairy but I took on the challenge and I am pleased with the outcome. They are everything you expect from a scone, crispy on the outside but moist and soft on the inside, with some cranberries and spices in there to get your tastebuds going! 

Ingredients.

  • 100g Gluten free Plain Flour - My favourite is Doves Farm.
  • 1 Teaspoon of Baking Powder.
  • 1 Egg.
  • 30g Sugar.
  • 50g Butter.
  • 25g Dried Cranberries.
  1. Sift the flour, baking powder and sugar into a bowl.
  2. Add the butter and rub it into the mixture until is a breadcrumb texture.
  3. Mix in the egg until you get a soft dough.
  4. Add in your cranberries.
  5. Move dough onto a floured surface and roll out.
  6. Cut your dough into circles and place on a greased baking tray.
  7. Bake in a preheated oven at 180c for 15-20 minutes. 
  8. When golden brown, remove from oven to cool.
  9. To serve, cut in half and spread Jam, Cream, Butter, or whatever your preference is, and enjoy!
