10 Minute Peanut Butter Cookies

I'm When Ive had a rubbish day and I'm feeling a bit down, I like to get in the kitchen and bake myself a little pick me.
So today I came home and headed straight for the cupboard! I found some peanut butter, baking powder and maple syrup so shoved them all in a bowl and added an egg. 
The outcome was amazing. It literally took 10 minutes to put everything in a bowl and whisk it up, and 10 minutes in the oven. The cookies came out soft on the inside and crisp on the outside, just what you want, and the taste of peanut butter comes through in every mouthful!

Plus they are Gluten Free, Dairy free and Sugar free. What more do you want?!

3 tablespoons of Peanut butter - I used Wholefoods smooth peanut butter 
1 egg. 
Half teaspoon of Baking Powder. 
3 tablespoons of Maple Syrup. 

1. Put all of the ingredients in a bowl. 
2. Whisk the ingredients together until it is a smooth mixture. 
3. Spoon the mixture onto a baking tray, about 3cm apart. 
4. Put in the oven for 10 minutes at about 180 degrees. 
5. Leave to cool and enjoy!
