Enchiladas

This has to be one of the meals I have missed the most since being gluten and dairy free. But I really really craved it so I had to try and make it.
My favourite gluten free wraps have to be the Warburtons Seeded wraps! They give the recipe a little extra taste :) 
The recipe below is just for one person, so double, triple or quadruple for however many people you make it for. 

Ingredients. 
- 1 Chicken fillet.  
- 1 and a half wraps. 
- 3 mushrooms. 
- Variety of peppers. 
- Fresh clove of garlic. 
- Paprika. 
- Chilli powder. 
- Tinned tomatoes. 
- Dairy free cheese - I love Lactofree. 

1. Cut the chicken into small pieces and fry in a pan with some coconut oil. 
2. When chicken is cooked, add in the chopped mushrooms and peppers. 
3. Fry for a few minutes, then add in the tinned tomatoes, garlic, chilli and paprika. 
4. Cut the whole wrap in half. Fill the 3 halved wraps with chicken and roll, put in a ceramic dish. (Save some sauce) 
5. Pour the leftover sauce on top of the wraps and sprinkle with cheese. 
6.  Put in the oven for about 15 minutes. 
7.  Serve with salad and enjoy!!
