Carrot Cake Porridge

So today I woke up with a sore throat, watery eyes and a stuffy nose aka a cold. I've been super busy for the past few weeks so this is my bodies way of telling me to take a break and slow down a little bit.
Obviously this also means I get to eat lots of different food to comfort me whilst lying in my bed with copious amounts of tea and Greys Anatomy. I am a massive fan of carrot cake and can eat porridge all day every day, so obviously this recipe was going to be a winner with me!! 

It's super easy to make, and takes about 10 minutes to make. it is full of cinnamon, nutmeg, ginger, turmeric and carrot (obviously) so its a really comforting bowl of goodness. The recipe is Gluten free, Dairy free, Egg free and Vegan, so ticks all the boxes. 



Ingredients.

  • 50 grams of Gluten free oats.
  • 1 teaspoon of date syrup.
  • 1 small carrot, grated.
  • 1 teaspoon of cinnamon, nutmeg, ginger and vanilla extract.
  • 250ml Soya or Almond Milk.
  • Handful of Raisins.
  1. Add all of the ingredients in a sauce pan and bring to the boil.
  2. Turn down the heat and keep stirring until you end up with a thick, gooey consistancy, just like a carrot cake mix.
  3. Pour mixture into a bowl and top with flaxseed, nuts and more dried fruit.
