Sweet Potato Pizza Base

Sweet Potatoes are such an amazing vegetable and unlike potatoes they count towards your 5 a day. They are also a fantastic source of vitamin c, potassium and manganese which help nourish the body inside. They are so versatile and can be used in so many different forms.

Before I've used sweet potatoes to make brownies, cakes, soups, jacket potatoes etc and now pizza. Its a really easy and simple recipe and uses only a few ingredients. The base is also light so it wont make you feel overly full, like a flour based version.



Ingredients. 

  • 2/3 medium sized sweet potatoes. 
  • 100 grams of almonds.
  • 1 teaspoon baking powder.
  • 1 teaspoon of Salt.
  • 1 tablespoon of chives.
Toppings:
  • Tomato Puree 
  • Cheese - I used Violife vegan cheese.
  • Veggies - Peppers, mushrooms, sweetcorn 
  1. Pre heat oven to 180 degrees.
  2. Start by peeling and chopping up the sweet potatoes. Then put them in a pan of boiling water. Leave for approximately 10 minutes.
  3. When they are soft, drain the water and mash the potatoes.
  4. Put the almonds in a food processor and blend until it forms a flour like consistency. 
  5. Add in the mashed sweet potato, baking powder, salt and chives and blend until mixed together.
  6. Place the orange mixture on a floured work surface and knead for a few minutes into a ball. 
  7. On a baking tray place some baking paper and squash down the mixture into a pizza shape (Or just a rectangular ish shape!) It should be about half a centimetre thick.
  8. Place in the middle of a pre heated oven for about 30 minutes or until its browned. 
  9. Take out of the oven and top with tomato puree and any other toppings you like. 
  10. Place back in the oven for about 20 minutes.
  11. Place on a plate and enjoy!
