Oat and Banana Brownies

So today I woke up with an awful headache, and I'm not great when I'm ill. All I want to do is comfort eat, so I decided to make some brownies. But I didn't want them to be super unhealthy so I'd end up feeling too bloated to do anything. I also wanted to make them super quick so I could head back to bed with a cuppa and watch endless re runs of Big Bang Theory!
I searched through my cupboards and found a packet of Bob's Red Mill Oat flour from Christmas. I find that oat flour gives brownies a slightly different taste to normal, slightly sweeter. Oat flour is also a great addition to baking because oats are a great source of protein, calcium, iron and vitamins B and E.
The banana is a great addition to this mixture as it makes the mixture moist without having to add any eggs or more milk in. Bananas are also good to get added Vitamin C and potassium in your body, always a bonus.

Ingredients.

  • 125 grams oat flour.
  • 50 grams of sugar - I used brown sugar to make it slightly sweeter.
  • 2 tbsp of cacao powder.
  • 2 tbsp of coconut oil.
  • 1 large banana - preferably ripe.
  • 125ml dairy free milk - I used Rude Healths Almond Milk.
  • Dark Chocolate.
  1. Combine the dry ingredients in a bowl - flour, sugar, cacao.
  2. In another bowl, mash up the banana until smooth and then stir in the oil and the milk.
  3. Whisk the wet and the dry ingredients together until they make a smooth cake mixture.
  4. Pour mixture into a greased baking tray and top with crushed up dark chocolate.
  5. Put in the oven for 25 minutes.
  6. Serve and enjoy!
