Gluten and Dairy free Christmas Cake

Over Christmas I love to have a bit of cake and custard in the evenings with a Christmas film on. 
But, since I have started my course in nutrition, I have noticed the amount of fats, calories and sugars in the pre-packed cake, and to be honest it scares me. I cannot believe how much sugar is pumped into shop bought cake! So I decided to make my own version of Christmas cake, but without the gluten, dairy and most important, sugar! 
Right now I'm not saying I have removed every single ounce of sugar, because I have packed it with lots and lot of dry fruit, but there is a massive difference! 

  • 200g Ground Almonds
  • 550g mixed fruit - Raisins, cranberries etc 
  • 1 orange - Zest and juice
  • 3 eggs
  • 40g walnuts - crushed 
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Half tsp nutmeg 
  • 2 tablespoons olive oil 
  1. Preheat the oven to 150 degrees.
  2. Mix the dried fruit, spices, olive oil, eggs and vanilla in a bowl.
  3. Stir in the almonds and walnuts until it is evenly mixed. 
  4. Cover a 20 inch baking tin with baking paper and spoon in the mixture.
  5. Bake in the oven for 1 hour and 30 minutes. 
  6. After this time, use a skewer to see if the mixture is cooked all the way through. If it comes out with some mixture on then pop it back in the oven for 10 more minutes. 
  7. Leave to cool, then remove from the tin and enjoy!
