Super Quick Vegetable Soup

It's that weird time period between Christmas and New Year, no one really knows what day it is, everyone is stuffed full of mince pies and prosecco, and everyone is now full of cold and flu! Myself included... 
It happens to me every year. You have a few days away from eating proper, whole foods and your body goes into attack mode... 

There are a few easy things you can do to make colds better... 

  1. Rest. (Any excuse to stay in bed a bit longer)
  2. Take some vitamin C (It has been found to reduce the symptoms by 5%) 
  3. Drink lots of liquids (By this I mean water and soup!) 
Soup is what I crave the most when I am ill. Just the fact that it is warming, filling and easy to pack with veggies makes it perfect to help your body recover. And to make it all better, this soup is ready in 20 minutes. Because, lets face it, no one wants to stand in a kitchen for hours on end cooking do they! 

The Tesco own brand vegetable stock cubes are both gluten and dairy free and really tasty!

  • 1 Potato
  • 2 Parsnips
  • 2 Carrots
  • 1 Vegetable Stock Cube
  • 400 ml Boiling Water
  1. Peel and chop the vegetables up into small chunks.
  2. Place in the pan with the water and the stock cube. 
  3. After 10-12 minutes, or when the vegetables are soft enough, use a hand blender to blend until smooth. 
  4. Pour into a bowl and enjoy!!
