Chocolate Peanut Butter Cupcakes

My sister turned 21 today!! (It's making me feel so old!) 

She is a massive lover of the gym, doesn't consume dairy and is vegetarian, add that to the fact that I can't consume gluten, it makes having cake for birthdays really difficult between us. 
So I decided to spend my Saturday baking some healthy, gluten free, dairy free cupcakes! 
I say healthy, but by this I mean there is a low amount of salt and there is no refined sugars included! 
I actually got this recipe from my Gluten Free Yearbook by Free From Heaven, which I received for Christmas.

The cupcakes are soft, but gooey and have the texture of a brownie with a chocolatey and peanut buttery taste. What is not to love! 

This mixture made 18 cakes for me, a lot of them barely made it out of the oven though! 


For the Cake:

  • 100g Coconut Oil (I use Vita Coco)
  • 100g Peanut Butter (I used Meridian Smooth Peanut Butter)
  • 150ml Maple Syrup
  • 3 Large Free Range Eggs
  • 1 tsp Vanilla Extract
  • 150g Ground Almonds
  • 125g Oat Flour
  • 75g Cacao Powder
  • 2 tsp Baking Powder
  • 250ml Soya Milk 
For the Icing:
  • 100g Coconut Oil 
  • 100g Peanut Butter 
  • 25g Cacao Powder
  • 40ml  Maple Syrup
  • 1 tsp Vanilla Extract

  1. Preheat the oven to 170 degrees/Gas Mark 3. 
  2. Mix together ground almonds, oat flour, baking powder and cacao together in a bowl. 
  3. In a different bowl, mix together the coconut oil, maple syrup and peanut butter. 
  4. Add in the milk, vanilla extract and eggs and use an electric whisk to make the mixture smooth. 
  5. Stir in the dry ingredients. The consistency should be like a brownie. AKA thick and chocolatey!
  6. Divide the mixture between your cupcake cases. Bake for 18-20 minutes until they have a brownie like texture and are spongy. 
  7. Leave to cool.
  8. Mix all of the icing ingredients into a food processor and when combined,place this mixture into the fridge for 10 minutes to set. 
  9. After 10 minutes, take out of the fridge and spread onto the cupcakes. 
  10. Store the cupcakes in an airtight container.
