3 Ingredient Pancakes

Pancakes are always a good idea right? For weekend brunch or dinner they are always a good idea. 
When they are gluten free, dairy free, are made of just three ingredients and are healthy then you can't really say no can you?!

Eggs are a great source of protein, with more than half of this in the egg white along with vitamin B2, D, selenium and minerals such as zinc, copper and iron. They also contain all eight essential omega-3 essential amino acids (The ones which our body do not contain and we have to obtain from our food). 

Banana's contain a good amount of fibre and is good for the digestive system. They are also a good at soothing many different ailments such as diarrhoea, constipation, heartburn and stomach ulcers. 

So why wouldn't you mix the two together into a simple and easy pancake stack which contains loads of health benefits?! 

I used the Pip and Nut Almond Butter  in this recipe. It is such a good addition and give the pancakes a lovely flavour. You could always exchange the almond butter for any other nut butter if you prefer. Obvs I had to top it with some more almond butter and some raisins for a little sweetness. 


2 Ripe Bananas

2 Eggs

1 Tablespoon of Almond Butter 

  1. Mash the bananas in a bowl and stir in the eggs and almond butter. 
  2. Spoon in about 2 tablespoons of mixture into a pan. Flip after a few minutes (Be careful, they are delicate!)
  3. Stack up on a plate and serve!
