Healthy Gluten Free 'KFC' style chicken

KFC. One of the takeaway companies which don't offer any gluten free options, and I can't see it happening anytime soon! 

But why should we miss out on all the fun?!

My mum used this recipe for dinner a lot when we were kids, but I have literally just changed the breadcrumbs and flour into gluten free versions. 

I have also decided to use chicken legs instead of chicken breast so that it doesn't dry out as much and they hold together so much better.

There is an added ingredient of Nandos peri peri chicken in the flour and this gives the coating a lovely little spice and kick to it. If your not a fan of spices though then you could swap this to garlic, paprika, chives etc.  

Plus, this version is baked rather than deep fried in fat which makes it so much healthier than the actual KFC version. 

2 Eggs
200g Flour - I used Dove's farm Plain White Flour but any would work
200g Gluten Free Breadcrumbs
6 Chicken Legs
2 Teaspoons of Spice - You can use Chilli Powder, Mixed Spices, or I used Nandos Peri Peri Spice

  1. You will need three bowls for this. In one bowl whisk the eggs, another place the flour and the last the breadcrumbs. 
  2. Roll the chicken legs in the plain flour, dust off the excess, roll them in the egg and then coat in the breadcrumbs. 
  3. Continue to do this to all of the legs and place on a lined baking tray. 
  4. Place in the oven at 180 degrees for about half an hour. Turn after this time and cook for another half an hour. This ensures they are nice and crispy.
