Easy Banana Cookies

I’ve been poorly all week, I’ve had a horrible cold, nasty cough, been exhausted so slept most of the day and worst of all, I lost my appetite. 

But today it came back! And I had some energy so I thought I would mess around in the kitchen with some baking. I literally threw the ingredients I had in my cupboard into a blender and this is what I came up with!

These are made from just 5 ingredients and are completely gluten free, dairy free, soy free, egg free and vegan!

The added banana has made the cookies taste lovely and gooey and made them a little bit softer, which I love. I added almonds into the recipe to give an extra depth of flavour, but they also contain a good level of calcium and magnesium. I managed to get this bag from Lidl, the nuts in there are super cheap! 

I added in nut butter to this recipe to help to bind the ingredients together. I used Pip and Nut Coconut and Almond Butter, but you could use any other kind of nut butter that you have in the cupboard.

50g Almonds
40g Gluten Free Oats
1 Ripe Banana
1 Tablespoon of Pip and Nut Coconut and Almond Butter (Or any other nut butter of your choice)
Dairy Free Chocolate

1.       Pre heat the oven to 170 degrees.
2.       Place the almonds in a blender and blitz until they are ground into small pieces.
3.       Add in the oats, banana and the nut butter and blitz again until the mixture is blended together.
4.       Line a baking tray with baking paper and spoon little balls of the mixture on, leaving a few centimetres in between each one.
5.       Place a square of chocolate on top of each of the cookies.
6.       Place in the middle of the oven for 15 minutes.

7.       Serve warm or cold!
