Indulgent Vegan Brownies

If you know me, you'll know I have a huge sweet tooth and love experimenting with different brownie experiments. 


At the moment I've been trying to create a recipe that is vegan and has that real treat feel too it. 
I had heard good things about adding in apple sauce to brownies to make them moist and bind them together. Basically a really good replacement for eggs. 
And as you can see from this picture, this batch had a really good density too them, a lovely, slightly chewy texture and were really indulgent. 


I am currently on a budget, due to over spending on holiday clothes (Don't judge we've all done it) so I went with very basic chocolate. Surprisingly this Sainsburys basic chocolate is dairy free and completely vegan and only cost 50p a bar!


This is the apple sauce that I used for the recipe. I will say something, it is full of sugar and isn't the unsweetened version. Next time I will make my own homemade apple sauce to try to cut down on the amount of sugar in the recipe...

Although, if your going to make an indulgent brownie, you might as well go for it right?!


Ingredients:
220g Vegan Chocolate - The darker the chocolate, the richer the recipe
230g Apple Sauce
30g Cacao Powder
Half a Teaspoon Baking Powder
1 Tsp Vanilla Extract
60g Gluten Free Oats

Method:
1. Get a saucepan of boiling water and let it simmer. Use a heat proof bowl and add the chocolate in. Melt until it is smooth. 
2. In a food processor, pulse the oats until they form a flour consistency. 
3. Add all of the ingredients into the food processor and blend until you get a smooth thick mixture. 
4. Place mixture in a lined baking tray and place in the oven for 30-35 minutes. 
5. Remove from oven and leave to cool until removing from tin and cutting up. 
6. Consume within 3-4 days and store in a tuppawear.
